Waffle Cake

Another year, another series of Great British Bake Off to crush over, so I thought I’d do a mini-series of bakes to go alongside the programme, but don’t worry there’ll still be some Sri Lankan recipes intermingled.

I had a summer BBQ recently and we celebrated my friend Carrie’s birthday with a waffle cake.  The idea stemmed from the US TV programme Parks and Recreation, where the lead character Leslie is obsessed with waffles: “We need to remember what’s important in life: friends, waffles, work. Or waffles, friends, work. Doesn’t matter, but work is third.”

Unlike the Pinterest waffle cakes I’ve seen, this one is waffle mixture not cake mixture, it’s only really a cake in structure.  Though it’s from a pancake recipe (so you could argue it is a cake…), same method just less milk so it remains a thick consistency.  I made a simple chocolate sauce that I nicked off James Martin: sugar, cocoa, hot water.  Served with ice cream.

I can’t take all the baking credit for the event as my friend Georgie brought over these delightful mini scones, complete with jam and clotted  cream, delicious!

Excuse the empty Pimm’s glasses lining all the photos, nothing like British Summer Time; forget waffles, friends, work, -barbecues, cream tea and Pimm’s is where it’s at…but take back waffles, I don’t want to forget them.

    Haha, I was reading about the Great British Bake Off finals in the paper yesterday – I haven’t watched any of it but it seems to be a phenomenon (as do Mary and Mr Hollywood… I can’t remember his name but he looks like he could be an Elvis impersonator). This cake looks WONDERFUL. I love adapted, interpretive cakes like this. Very special and shareable… and definitely an excuse to eat cake for breakfast, right?! xx
